Description

This Strawberry Tiramisu is a no-bake dessert that combines layers of ladyfingers soaked in strawberry syrup with a rich mascarpone cream and fresh strawberries. It's an elegant and refreshing twist on the classic Italian dessert, perfect for summer gatherings.


Ingredients

2 pounds fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1/4 cup water
1 tablespoon lemon juice
16 ounces mascarpone cheese, softened
1 cup heavy cream, chilled
1/2 cup powdered sugar
1 teaspoon alcohol-free vanilla extract
2 packages ladyfingers (about 24-30)


Instructions

  1. Hull and slice 1.5 pounds of strawberries; reserve 0.5 pounds for garnish. Toss with sugar and lemon juice and let sit for at least 30 minutes
  2. Drain the macerated strawberries to collect the syrup, mixing with 1/4 cup water
  3. In a large bowl, combine mascarpone, heavy cream, powdered sugar, and vanilla extract. Beat until thick and fluffy
  4. Dip ladyfingers in the strawberry syrup briefly and layer them in a 9×13-inch baking dish
  5. Spread half of the mascarpone cream over the ladyfingers and top with half of the strawberries
  6. Repeat layering with remaining ladyfingers, mascarpone cream, and strawberries
  7. Cover and refrigerate for at least 4-6 hours or overnight. Garnish with reserved strawberries before serving

Notes

For best results, use the freshest strawberries. Chill the heavy cream well before whipping.
