Description
This Strawberry Tiramisu is a no-bake dessert that combines layers of ladyfingers soaked in strawberry syrup with a rich mascarpone cream and fresh strawberries. It's an elegant and refreshing twist on the classic Italian dessert, perfect for summer gatherings.
Ingredients
2 pounds fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1/4 cup water
1 tablespoon lemon juice
16 ounces mascarpone cheese, softened
1 cup heavy cream, chilled
1/2 cup powdered sugar
1 teaspoon alcohol-free vanilla extract
2 packages ladyfingers (about 24-30)
Instructions
- Hull and slice 1.5 pounds of strawberries; reserve 0.5 pounds for garnish. Toss with sugar and lemon juice and let sit for at least 30 minutes
- Drain the macerated strawberries to collect the syrup, mixing with 1/4 cup water
- In a large bowl, combine mascarpone, heavy cream, powdered sugar, and vanilla extract. Beat until thick and fluffy
- Dip ladyfingers in the strawberry syrup briefly and layer them in a 9×13-inch baking dish
- Spread half of the mascarpone cream over the ladyfingers and top with half of the strawberries
- Repeat layering with remaining ladyfingers, mascarpone cream, and strawberries
- Cover and refrigerate for at least 4-6 hours or overnight. Garnish with reserved strawberries before serving
Notes
For best results, use the freshest strawberries. Chill the heavy cream well before whipping.
