1/2 teaspoon Ground cinnamo
1/4 teaspoon Salt
1/2 cup Unsalted butter, softened
3/4 cup Light brown sugar, packed
1 Large egg
1 teaspoon Vanilla extract
1 1/2 cups Rolled oats (old-fashioned oats)
1 cup Fresh strawberries, finely diced
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy
- Add the egg and vanilla extract, mixing until fully incorporated
- Gradually add the dry mixture to the wet ingredients, mixing until just combined
- Gently fold in the oats and finely diced strawberries until evenly distributed
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches apart
- Bake for 10-12 minutes until edges are golden brown and centers are just set
- Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely
