1 cup Fresh strawberries, finely diced


Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy
  4. Add the egg and vanilla extract, mixing until fully incorporated
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined
  6. Gently fold in the oats and finely diced strawberries until evenly distributed
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches apart
  8. Bake for 10-12 minutes until edges are golden brown and centers are just set
  9. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely
