Description

1 ½ cups Golden Sandwich Cookies, crushed
½ cup Freeze-Dried Strawberries, crushed
¼ cup Unsalted Butter, melted
2 tablespoons Granulated Sugar
½ teaspoon Vanilla Extract
Pinch of Salt
16 ounces Cream Cheese, softened
½ cup Granulated Sugar
1 teaspoon Vanilla Extract
¼ cup Sour Cream
2 large Eggs, room temperature
1 cup Fresh Strawberries, hulled and quartered
¼ cup Granulated Sugar
2 tablespoons Lemon Juice
1 tablespoon Cornstarch mixed with 2 tablespoons Cold Water


Instructions

  1. Prepare the crust by combining crushed cookies, freeze-dried strawberries, melted butter, sugar, vanilla, and salt. Press into muffin liners and bake at 325°F for 5-7 minutes
  2. Make the cheesecake filling by blending cream cheese, sugar, vanilla, and sour cream until smooth. Add eggs one at a time, combining gently
  3. Assemble by dividing the filling among crusts and bake for 18-22 minutes. Cool in the oven for 15 minutes, then refrigerate for at least 4 hours
  4. Prepare the strawberry glaze by simmering strawberries, sugar, and lemon juice, then blending until smooth. Mix in cornstarch slurry and thicke
  5. Serve the cheesecake bites with strawberry glaze and reserved crunch topping
