Ingredients
1 ½ cups Golden Sandwich Cookies, crushed
½ cup Freeze-Dried Strawberries, crushed
¼ cup Unsalted Butter, melted
2 tablespoons Granulated Sugar
½ teaspoon Vanilla Extract
Pinch of Salt
16 ounces Cream Cheese, softened
½ cup Granulated Sugar
1 teaspoon Vanilla Extract
¼ cup Sour Cream
2 large Eggs, room temperature
1 cup Fresh Strawberries, hulled and quartered
¼ cup Granulated Sugar
2 tablespoons Lemon Juice
1 tablespoon Cornstarch mixed with 2 tablespoons Cold Water
Instructions
- Prepare the crust by combining crushed cookies, freeze-dried strawberries, melted butter, sugar, vanilla, and salt. Press into muffin liners and bake at 325°F for 5-7 minutes
- Make the cheesecake filling by blending cream cheese, sugar, vanilla, and sour cream until smooth. Add eggs one at a time, combining gently
- Assemble by dividing the filling among crusts and bake for 18-22 minutes. Cool in the oven for 15 minutes, then refrigerate for at least 4 hours
- Prepare the strawberry glaze by simmering strawberries, sugar, and lemon juice, then blending until smooth. Mix in cornstarch slurry and thicke
- Serve the cheesecake bites with strawberry glaze and reserved crunch topping
