These Strawberry Crunch Brownies deliver a perfect symphony of dense, chocolatey brownies topped with creamy strawberry frosting and a crunchy strawberry topping. They combine fudgy richness with a bright, joyful twist.
Ingredients
1 cup Unsalted Butter, melted
2 cups Granulated Sugar
4 Large Eggs
1 teaspoon Vanilla Extract
1 cup All-Purpose Flour
¾ cup Unsweetened Cocoa Powder
½ teaspoon Baking Powder
½ teaspoon Salt
1 cup Unsalted Butter, softened
3–4 cups Powdered Sugar, sifted
¼ cup Heavy Cream or Milk
1 teaspoon Vanilla Extract
½ teaspoon Strawberry Extract (optional)
2 tablespoons Freeze-Dried Strawberry Powder
1 ½ cups Vanilla Wafers, crushed
½ cup Granulated Sugar
¼ cup Unsalted Butter, melted
2 tablespoons Freeze-Dried Strawberry Powder
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper
- In a large bowl, whisk together the melted butter and granulated sugar until glossy and combined
- Beat in the eggs one at a time, then stir in the vanilla extract
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt
- Fold the dry ingredients into the wet ingredients until just combined, then pour into the prepared pa
- Bake for 25-30 minutes until a toothpick comes out with moist crumbs
- Let the brownies cool completely in the pan on a wire rack
- For the crunch topping, crush the vanilla wafers and combine with sugar, melted butter, and strawberry powder, then bake until golde
- For the frosting, beat softened butter until light, then gradually add powdered sugar and mix in cream, extracts, and strawberry powder
- After the brownies are completely cool, frost with the strawberry buttercream and top with the strawberry crunch
- Chill and then cut into squares to serve
