1 teaspoon Vanilla extract
1 ½ cups Fresh strawberries, hulled and diced
4 ounces Cream cheese, softened
¼ cup Granulated sugar
1 large Egg yolk
½ teaspoon Vanilla extract


Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin pa
  2. Make the cream cheese swirl by mixing cream cheese, ¼ cup sugar, egg yolk, and ½ teaspoon vanilla until smooth
  3. In a large bowl, combine flour, ¾ cup sugar, baking powder, baking soda, and salt
  4. In a separate bowl, whisk together egg, milk, yogurt, vegetable oil, and 1 teaspoon vanilla
  5. Combine wet and dry ingredients until just mixed, then fold in strawberries
  6. Fill muffin cups and add a spoonful of cream cheese mixture on top, swirled gently
  7. Bake at 400°F for 5 minutes, then reduce to 375°F and bake for an additional 15-18 minutes
  8. Cool before serving
