Ingredients
2 cups All-purpose flour
¾ cup Granulated sugar
2 teaspoons Baking powder
½ teaspoon Baking soda
¼ teaspoon Salt
1 large Egg, room temperature
½ cup Milk, room temperature
½ cup Plain yogurt, room temperature
¼ cup Vegetable oil
1 teaspoon Vanilla extract
1 ½ cups Fresh strawberries, hulled and diced
4 ounces Cream cheese, softened
¼ cup Granulated sugar
1 large Egg yolk
½ teaspoon Vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and prepare a muffin pa
- Make the cream cheese swirl by mixing cream cheese, ¼ cup sugar, egg yolk, and ½ teaspoon vanilla until smooth
- In a large bowl, combine flour, ¾ cup sugar, baking powder, baking soda, and salt
- In a separate bowl, whisk together egg, milk, yogurt, vegetable oil, and 1 teaspoon vanilla
- Combine wet and dry ingredients until just mixed, then fold in strawberries
- Fill muffin cups and add a spoonful of cream cheese mixture on top, swirled gently
- Bake at 400°F for 5 minutes, then reduce to 375°F and bake for an additional 15-18 minutes
