These Strawberry Cake Mix Cookies are vibrant, tender, and incredibly easy to make, capturing the essence of childhood memories and effortless baking.
Ingredients
1 (15.25-ounce) box strawberry cake mix
2 large eggs
1/2 cup neutral oil
1 teaspoon vanilla extract (optional)
1/2 cup powdered sugar (optional)
1/2 cup white chocolate chips or dark chocolate chips (optional)
Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper
- In a large mixing bowl, crack the two large eggs. Add the neutral oil and vanilla extract. Whisk until combined and slightly frothy
- Pour the entire box of strawberry cake mix into the bowl with the wet ingredients
- Mix the ingredients with a rubber spatula or sturdy spoon until a soft, sticky dough forms. Fold in any add-ins if using
- For best results, chill the dough for 15-30 minutes
- Scoop about 1 tablespoon of dough, roll into a ball, and optionally coat in powdered sugar
- Place the dough balls on the prepared baking sheets, spaced 2 inches apart
- Bake for 9-11 minutes, until edges are just set and centers look soft
- Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely
Notes
Ensure to use a good quality cake mix sans pudding for best texture.
Chilling the dough helps reduce spreading during baking.
