Ingredients
2 ½ cups All-purpose flour
2 teaspoons Baking powder
¼ teaspoon Salt
1 cup Unsalted butter, softened
1 ½ cups Granulated sugar
2 large Eggs
1 tablespoon Fresh lemon zest
2 tablespoons Fresh lemon juice
1 teaspoon Pure vanilla extract
½ teaspoon Yellow food coloring (optional)
1 cup Powdered sugar, for rolling
Instructions
- Whisk together the all-purpose flour, baking powder, and salt in a medium bowl and set aside
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy
- Add the eggs one at a time to the butter mixture, beating until fully incorporated after each additio
- Stir in the fresh lemon zest, fresh lemon juice, vanilla extract, and yellow food coloring until combined
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined
- Chill the dough for at least 2 hours or overnight
- Preheat the oven to 350°F (175°C) and prepare the baking sheets
- Roll the chilled dough into balls and coat them generously in powdered sugar
- Place the balls on baking sheets 2 inches apart and bake for 10-12 minutes
- Cool for 5 minutes on the baking sheets before transferring to a wire rack
Notes
For best results, chill the dough and use plenty of powdered sugar for the crinkle effect.
