Description

Ingredients

2 ½ cups All-purpose flour
2 teaspoons Baking powder
¼ teaspoon Salt
1 cup Unsalted butter, softened
1 ½ cups Granulated sugar
2 large Eggs
1 tablespoon Fresh lemon zest
2 tablespoons Fresh lemon juice
1 teaspoon Pure vanilla extract
½ teaspoon Yellow food coloring (optional)
1 cup Powdered sugar, for rolling


Instructions

  1. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl and set aside
  2. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy
  3. Add the eggs one at a time to the butter mixture, beating until fully incorporated after each additio
  4. Stir in the fresh lemon zest, fresh lemon juice, vanilla extract, and yellow food coloring until combined
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined
  6. Chill the dough for at least 2 hours or overnight
  7. Preheat the oven to 350°F (175°C) and prepare the baking sheets
  8. Roll the chilled dough into balls and coat them generously in powdered sugar
  9. Place the balls on baking sheets 2 inches apart and bake for 10-12 minutes
  10. Cool for 5 minutes on the baking sheets before transferring to a wire rack

Notes

For best results, chill the dough and use plenty of powdered sugar for the crinkle effect.
