Ingredients
3 Large Eggs
1 cup Fresh Spinach, packed
1/4 cup Feta Cheese, crumbled
1 tablespoon Milk or Cream
1 teaspoon Olive Oil or Butter
1/4 teaspoon Salt, or to taste
1/8 teaspoon Freshly Ground Black Pepper, or to taste
Optional: A pinch of Garlic Powder
Instructions
- Prepare the Spinach: Heat 1/2 teaspoon of olive oil or butter in an 8-inch non-stick skillet over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted. Remove and press out excess water
- Whisk the Eggs: Crack the eggs into a bowl, add milk, salt, and pepper. Whisk vigorously for 30-60 seconds
- Heat the Skillet: Wipe out the skillet, add the remaining oil or butter, and heat over medium-low
- Pour the Eggs: Pour the egg mixture into the skillet. Cook undisturbed for 30 seconds
- Cook and Scramble Gently: Push cooked edges toward the center, tilting the pan to let uncooked egg flow underneath
- Add Fillings: Distribute the spinach over one half of the omelette and sprinkle with feta
- Fold and Finish: Fold the omelette in half and cook for another 30 seconds to a minute
- Serve Immediately: Slide the omelette onto a plate and enjoy
