- Prepare Your Ingredients: Wash all your fresh produce thoroughly. Chop the onion, mince the garlic, and deseed and chop the red bell peppers. Wear gloves when handling habanero and Scotch bonnet peppers, then finely chop
- Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5-7 minutes
- Build the Flavor Base: Add garlic, red bell peppers, habanero peppers, and optional Scotch bonnet peppers. Cook for another 5-8 minutes
- Introduce Tomatoes and Spices: Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, vinegar, brown sugar, smoked paprika, cumin, coriander, cayenne, salt, and black pepper. Mix well
- Simmer and Develop: Bring to a simmer, reduce heat to low, cover, and cook for at least 30-45 minutes, stirring occasionally
- Blend to Perfection: Remove from heat and blend sauce to desired consistency
- Final Adjustments: Taste and adjust seasonings as needed, then stir in fresh cilantro if desired
- Cool and Store: Allow to cool completely before transferring to jars. Store in the fridge or freeze for longer storage
