Ingredients

  • Black pepper — 1/2 teaspoon
  • Garlic powder — 1 teaspoon
  • Onion powder — 1 teaspoon
  • Fresh jalapeños — 2–3, finely diced (remove seeds for less heat)
  • Garlic — 3 cloves, minced
  • Chicken broth — 1 cup
  • Heavy cream — 1 cup
  • Cream cheese — 4 oz, softened
  • Parmesan cheese (grated) — 1/2 cup
  • Fresh spinach — 2 cups (optional)
  • Fresh cilantro (chopped) — 2 tablespoons (for garnish)

Instructions

  1. Pat chicken pieces dry and season with salt, pepper, garlic powder, and onion powder
  2. Heat olive oil in a skillet and sear the chicken until golden brown, about 3-4 minutes per side. Remove from skillet
  3. Sauté jalapenos and minced garlic in the same skillet until fragrant, about 2-3 minutes
  4. Deglaze the skillet with chicken broth, then stir in softened cream cheese until melted
  5. Add heavy cream and grated Parmesan cheese, stirring until melted and sauce thickens. Adjust seasoning if necessary
  6. Return chicken to skillet and stir in spinach (if using), simmering for 5-7 minutes
  7. Garnish with fresh cilantro and serve immediately

Notes

To reduce spiciness, remove jalapeno seeds and membranes.
