Ingredients
6 medium Potatoes, peeled and diced
1 medium Onion, chopped
3 cloves Garlic, minced
1 medium Red bell pepper, diced
1 medium Green bell pepper, diced
4 cups Vegetable broth
1 cup Heavy cream
2 teaspoons Cajun seasoning
Salt, to taste
Black pepper, to taste
2 tablespoons Olive oil
2 stalks Celery, chopped
3 tablespoons All-purpose flour
Parsley, for garnish
Instructions
- Heat olive oil in a pan, sauté onions, garlic, celery, and bell peppers until they're soft. Transfer them to your slow cooker
- Add diced potatoes, vegetable broth, and Cajun seasoning to the slow cooker. Stir well to combine
- Set your slow cooker on low and let it simmer for 6-7 hours or until the potatoes are tender
- Mix heavy cream with flour to create a slurry. Gradually add this mixture to the slow cooker, stirring until the soup thickens
- Season with salt and black pepper to taste, and let it cook for an additional 30 minutes
- Serve hot, garnished with fresh parsley
Notes
For a velvety texture, use a potato masher to break down some of the potatoes.
