Slow Cooker Beef Ramen Noodles is a comforting dish with tender beef, savory broth, and chewy ramen noodles cooked to perfection in one pot.
Ingredients
- 1.5 pounds beef chuck roast, cut into chunks
- 4 cups beef broth
- 1 cup soy sauce
- 1/4 cup mirin (rice wine)
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons sesame oil
- 1 cup sliced mushrooms
- 2 cups baby spinach or kale
- 4 packs ramen noodles (discard seasoning packets)
- Optional toppings: sliced green onions, soft-boiled eggs, sesame seeds, chili flakes
Instructions
1. Place beef chunks in the slow cooker.
2. In a bowl, whisk together beef broth, soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil.
3. Pour the broth mixture over the beef in the slow cooker.
4. Add mushrooms on top, cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
5. About 30 minutes before serving, add the spinach or kale and ramen noodles.
6. Cook until noodles are tender, about 15 minutes.
7. Stir gently to combine, then serve hot with desired toppings.
Notes
Brown the beef beforehand for extra flavor.
Add noodles late to prevent sogginess.
Store leftovers separately with noodles for best texture.
