Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup whole milk
- 2 cups frozen mixed vegetables (peas, carrots, corn, optional)
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
2. Heat oil in a skillet over medium heat. Add onion and cook until soft, then add garlic and ground beef. Cook until browned; drain excess fat.
3. Stir in salt and pepper, then mix in the cream of mushroom soup and milk. Fold in the frozen mixed vegetables.
4. Transfer mixture to prepared baking dish. Sprinkle half the cheese on top.
5. Evenly arrange frozen tater tots over the beef mixture in a single layer.
6. Bake for 35 minutes. Remove from oven, sprinkle remaining cheese on top, bake another 10–15 minutes until cheese is melted and tater tots are crisp and golden.
7. Let casserole rest for 5 minutes before serving.
Notes
You can substitute ground turkey or chicken for the beef.
For spicier casserole, add a pinch of chili powder or top with jalapeño slices.
Store leftovers tightly covered in the refrigerator for up to 4 days.
Freeze portions in airtight containers for up to 2 months.
