Ingredients

  • 2 tablespoons unsalted butter, plus extra for greasing
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 6 tablespoons all-purpose flour
  • 4 cups whole milk, warmed
  • 1 cup chicken broth (or vegetable broth)
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste, depending on ham saltiness)
  • 3 pounds Russet or Yukon Gold potatoes, peeled and thinly sliced (about 1/8-inch thick)
  • 2 cups cooked ham, diced into 1/2-inch pieces
  • 2 cups shredded Gruyere cheese, divided
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/4 cup fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly butter a 9×13-inch baking dish
  2. In a large saucepan, melt the butter over medium heat, add the diced onion and cook until softened, then add minced garlic
  3. Sprinkle the flour over the onion and garlic mixture and cook for 1-2 minutes to create a roux
  4. Gradually whisk in the warmed milk and chicken broth, stirring until the sauce thickens
  5. Remove the saucepan from heat and season the sauce with nutmeg, black pepper, and salt. Stir in 1 cup of Gruyere and 1/2 cup of cheddar until melted
  6. Layer one-third of the potatoes in the baking dish, followed by half of the ham and a third of the cheese sauce. Repeat the layers
  7. Finish with the last of the potatoes and cheese sauce on top
  8. Cover with foil and bake for 60 minutes
  9. Uncover, sprinkle remaining cheese on top, and bake for an additional 20-30 minutes until bubbly and golden brow
  10. Let rest for 10-15 minutes before serving and garnish with fresh parsley if desired

Notes

Warm your milk before adding it to the roux to ensure a smooth cheese sauce.
