- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 6 tablespoons all-purpose flour
- 4 cups whole milk, warmed
- 1 cup chicken broth (or vegetable broth)
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1 teaspoon salt (or to taste, depending on ham saltiness)
- 3 pounds Russet or Yukon Gold potatoes, peeled and thinly sliced (about 1/8-inch thick)
- 2 cups cooked ham, diced into 1/2-inch pieces
- 2 cups shredded Gruyere cheese, divided
- 1 cup shredded sharp cheddar cheese, divided
- 1/4 cup fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly butter a 9×13-inch baking dish
- In a large saucepan, melt the butter over medium heat, add the diced onion and cook until softened, then add minced garlic
- Sprinkle the flour over the onion and garlic mixture and cook for 1-2 minutes to create a roux
- Gradually whisk in the warmed milk and chicken broth, stirring until the sauce thickens
- Remove the saucepan from heat and season the sauce with nutmeg, black pepper, and salt. Stir in 1 cup of Gruyere and 1/2 cup of cheddar until melted
- Layer one-third of the potatoes in the baking dish, followed by half of the ham and a third of the cheese sauce. Repeat the layers
- Finish with the last of the potatoes and cheese sauce on top
- Cover with foil and bake for 60 minutes
- Uncover, sprinkle remaining cheese on top, and bake for an additional 20-30 minutes until bubbly and golden brow
- Let rest for 10-15 minutes before serving and garnish with fresh parsley if desired
