Description
This Roasted Tomato Pasta Sauce is a vibrant and intensely flavorful dish made from fresh roasted tomatoes, garlic, herbs, and olive oil, perfect for capturing the essence of summer in every bite.
Ingredients
2.5 lbs Roma tomatoes, halved or quartered
6–8 cloves Garlic, peeled and smashed
1/4 cup Extra virgin olive oil
1 teaspoon Dried oregano
1/2 teaspoon Dried thyme
1/4 teaspoon Red pepper flakes
1 teaspoon Salt
1/2 teaspoon Black pepper, freshly ground
1 teaspoon Granulated sugar
1/2 cup Fresh basil leaves, tor
1 lb Pasta of your choice
1/2 cup Pasta water, reserved
Instructions
- Preheat your oven to 400°F (200°C). Wash and pat dry your tomatoes. Halve smaller tomatoes like cherry or grape varieties. Quarter larger Roma tomatoes
- Spread the cut tomatoes in a single layer on a large baking sheet. Add the peeled and smashed garlic cloves. Drizzle generously with olive oil and sprinkle with dried oregano, dried thyme, red pepper flakes (if using), salt, black pepper, and optional sugar. Toss gently to coat
- Transfer the baking sheet to the preheated oven and roast for 40-50 minutes until the tomatoes are softened and caramelized
- While the tomatoes roast, bring a large pot of salted water to a boil. Add pasta and cook until al dente, reserving about 1 cup of pasta water before draining
- Transfer roasted tomatoes, garlic, and juices into a blender. Add half of the fresh basil leaves and blend until smooth
- Pour the blended sauce into a skillet or pot, add the cooked pasta, and stir to coat, adding reserved pasta water to thin if necessary. Stir in remaining fresh basil
- Taste and adjust seasonings if needed, then serve immediately, garnished with extra basil or a drizzle of olive oil
Notes
Use high-quality, ripe tomatoes for the best flavor.
Feel free to mix different types of tomatoes or add vegetables to the roasting process.
