½ cup (113g) Unsalted Butter, melted
1 tablespoon White Vinegar
1 teaspoon Vanilla Extract
12 tablespoons Red Food Coloring (gel preferred)
16 ounces (450g) Full-Fat Cream Cheese, softened
½ cup (100g) Granulated Sugar
2 Large Eggs, at room temperature
1 teaspoon Vanilla Extract
Pinch of Salt
4 ounces (113g) Full-Fat Cream Cheese, softened (for frosting)
¼ cup (56g) Unsalted Butter, softened (for frosting)
2 cups (240g) Powdered Sugar, sifted (for frosting)
1 teaspoon Vanilla Extract (for frosting)
12 tablespoons Milk (as needed for consistency, for frosting)


Instructions

  1. Preheat oven to 325°F (160°C) and line a 12-cup muffin pan with paper liners
  2. Whisk together flour, sugar, cocoa powder, baking soda, and salt in a large bowl; in another bowl, whisk together egg, buttermilk, melted butter, vinegar, and vanilla. Mix wet and dry ingredients, then add food coloring
  3. Evenly divide the red velvet batter among the muffin liners, about 2 tablespoons each. Bake for 10-12 minutes, then let cool
  4. Beat cream cheese and sugar until smooth, then add eggs one at a time, followed by vanilla and salt. Avoid overmixing
  5. Pour cheesecake filling over the cooled crusts, filling almost to the top. Bake for 20-25 minutes, until edges set and centers jiggle
  6. Cool completely, then refrigerate for at least 4 hours or overnight
  7. If using frosting, beat cream cheese and butter until fluffy, then add powdered sugar and vanilla. Adjust consistency with milk if needed. Frost chilled cheesecake bites
