These Red Velvet Cake Protein Bars are a delicious, healthier twist on the classic red velvet cake, packed with protein and perfect for a guilt-free snack.
Ingredients
1 cup Vanilla protein powder
½ cup Almond flour
¼ cup Unsweetened cocoa powder
½ cup Granulated erythritol
¼ teaspoon Sea salt
1–2 tablespoons Beet powder or 1 teaspoon Red gel food coloring
½ cup Cashew butter
¼ cup Sugar-free maple syrup
1 teaspoon Vanilla extract
2–4 tablespoons Unsweetened almond milk
4 ounces Light cream cheese
¼ cup Powdered erythritol
½ teaspoon Vanilla extract for frosting
1–2 tablespoons Unsweetened almond milk for frosting
Instructions
- Prepare Your Pan: Line an 8×8 inch baking dish with parchment paper
- Combine Dry Ingredients: In a mixing bowl, whisk together protein powder, almond flour, cocoa powder, erythritol, sea salt, and beet powder or food coloring
- Add Wet Ingredients: Mix in cashew butter, maple syrup, and vanilla extract
- Mix and Hydrate: Combine the mixture and add almond milk gradually to achieve a thick dough-like consistency
- Press into Pan: Transfer the mixture into the prepared dish and press evenly
- Prepare the Frosting: Mix the cream cheese, powdered erythritol, and vanilla until smooth, adding almond milk as needed
- Frost the Bars: Spread the frosting over the pressed bars evenly
- Chill Time: Cover and refrigerate for 2-3 hours until firm
- Cut and Serve: Slice into bars and enjoy!
