Ingredients

2 pounds Boneless, skinless chicken breasts, cut into 1-inch cubes
3 tablespoons Olive oil
2 tablespoons Dry ranch seasoning mix
2 teaspoons Garlic powder
1 teaspoon Onion powder
1/2 teaspoon Black pepper
1/2 cup Grated Parmesan cheese
1/4 cup Fresh parsley, chopped (for garnish, optional)
1215 Wooden or metal skewers


Instructions

  1. Pat the chicken dry and cut into 1-inch cubes, then place in a mixing bowl
  2. Add olive oil, ranch seasoning, garlic powder, onion powder, and black pepper; mix until coated
  3. Sprinkle Parmesan cheese over chicken and mix again to combine
  4. Marinate the chicken in the refrigerator for at least 15 minutes
  5. Soak wooden skewers in water for 30 minutes if using
  6. Thread chicken onto skewers, leaving small spaces between pieces
  7. Grill over medium-high heat for 8-10 minutes, turning occasionally, until cooked through
  8. Serve hot, garnished with parsley and extra Parmesa

Notes

For a plant-based option, substitute chicken with firm tofu or tempeh.

You can include vegetables like cherry tomatoes or bell peppers on the skewers.
