Ingredients
2 pounds Boneless, skinless chicken breasts, cut into 1-inch cubes
3 tablespoons Olive oil
2 tablespoons Dry ranch seasoning mix
2 teaspoons Garlic powder
1 teaspoon Onion powder
1/2 teaspoon Black pepper
1/2 cup Grated Parmesan cheese
1/4 cup Fresh parsley, chopped (for garnish, optional)
12–15 Wooden or metal skewers
Instructions
- Pat the chicken dry and cut into 1-inch cubes, then place in a mixing bowl
- Add olive oil, ranch seasoning, garlic powder, onion powder, and black pepper; mix until coated
- Sprinkle Parmesan cheese over chicken and mix again to combine
- Marinate the chicken in the refrigerator for at least 15 minutes
- Soak wooden skewers in water for 30 minutes if using
- Thread chicken onto skewers, leaving small spaces between pieces
- Grill over medium-high heat for 8-10 minutes, turning occasionally, until cooked through
- Serve hot, garnished with parsley and extra Parmesa

For a plant-based option, substitute chicken with firm tofu or tempeh.
You can include vegetables like cherry tomatoes or bell peppers on the skewers.
