Ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup Greek yogurt or plant-based yogurt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour or oat flour
- 1/2 cup protein powder (vanilla or unflavored)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Optional: 1/2 cup chopped nuts or dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line or grease muffin tin.
2. Mash bananas in a bowl.
3. Mix in eggs, yogurt, honey, and vanilla extract.
4. Whisk dry ingredients separately: flour, protein powder, baking soda, baking powder, cinnamon, salt.
5. Combine dry ingredients with wet mixture gently.
6. Fold in nuts or chocolate chips if desired.
7. Fill muffin cups two-thirds full.
8. Bake for 18-22 minutes or until toothpick comes out clean.
9. Cool 5 minutes in tin then transfer to wire rack.
