Ingredients
1 cup Warm Milk
2 ¼ teaspoons Active Dry Yeast
¼ cup Granulated Sugar
1 large Egg
¼ cup Unsalted Butter
½ teaspoon Salt
3 ½ – 4 cups All-Purpose Flour
½ cup Unsalted Butter, Softened
¾ cup Granulated Sugar
½ cup Pistachio Paste
½ cup Finely Chopped Pistachios
4 ounces Cream Cheese, Softened
¼ cup Unsalted Butter, Softened
2 cups Powdered Sugar, Sifted
½ teaspoon Vanilla Extract
1–2 tablespoons Milk or Cream
Optional: 1-2 tablespoons Finely Chopped Pistachios for Garnish
Instructions
- Activate the Yeast: Warm the milk and combine with yeast and sugar. Let sit until foamy
- Prepare the Dough: Combine yeast mixture with sugar, melted butter, egg, and salt. Gradually add flour until a dough forms. Knead until smooth
- First Rise: Grease a bowl, place dough in it, cover, and let rise until doubled, about 1 to 1.5 hours
- Make the Pistachio Filling: Cream softened butter, sugar, and pistachio paste together. Add chopped pistachios
- Assemble the Rolls: Roll out dough, spread filling, roll tightly, and cut into rolls
- Second Rise: Place rolls in a greased baking dish, cover, and let rise until puffy, about 30-45 minutes
- Bake the Rolls: Preheat oven and bake rolls until golden brown, about 20-25 minutes
- Make the Cream Cheese Frosting: Beat together cream cheese and butter, add powdered sugar and vanilla, adjust consistency with milk
- Frost and Serve: Frost warm rolls and garnish with chopped pistachios if desired

Make sure the yeast is active by checking for foam in the milk.
