Ingredients
1 cup unsalted butter, softened
¾ cup granulated sugar
¾ cup light brown sugar
1 large egg
1 tsp vanilla extract
½ cup crushed pineapple, well-drained
2 ¾ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
Instructions
1. Cream the butter and sugars until light and fluffy.
2. Beat in the egg, vanilla, and crushed pineapple.
3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
4. Gradually mix dry ingredients into wet ingredients until combined.
5. Chill the dough in the refrigerator for at least 1 hour.
6. Preheat oven to 350°F and line baking sheets with parchment.
7. Scoop dough onto baking sheets, spacing 2 inches apart.
8. Bake 10–12 minutes or until edges are golden.
9. Cool on sheet for 5 minutes, then transfer to wire rack.
Notes
Ensure pineapple is well-drained to prevent excess moisture.
Try adding shredded coconut or white chocolate chips for a fun twist.
These cookies freeze beautifully. Store up to 3 months in a sealed container.
