Description
This pineapple sugar cookie recipe is soft, chewy, and filled with tropical flavor thanks to crushed pineapple and a touch of sour cream. Perfect for any season and easy to bake in batches.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1/2 cup well-drained crushed pineapple
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp sour cream or cream cheese (optional)
Instructions
1. Cream butter and sugar together in a large bowl until light and fluffy.
2. Add egg and mix until fully incorporated.
3. Fold in crushed pineapple and optional sour cream.
4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
5. Gradually mix dry ingredients into the wet until a soft dough forms.
6. Cover dough and chill in refrigerator for at least 1 hour.
7. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
8. Scoop dough onto baking sheet, spacing 2 inches apart.
9. Bake for 10–12 minutes until edges are golden.
10. Cool on pan for 2 minutes, then transfer to wire rack to finish cooling.
Notes
Make sure the pineapple is well-drained to avoid soggy dough.
For stronger pineapple flavor, add 1 tbsp of reserved pineapple juice.
Cookies stay soft for up to 5 days in an airtight container.
