2 tablespoons granulated sugar (for peaches)
1 tablespoon cornstarch
1 tablespoon fresh lemon juice
1 large egg, beaten (for egg wash)
Pinch of salt
Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Roll out the thawed puff pastry to a 10×12-inch rectangle and score a 1-inch border
- In a medium bowl, beat together softened cream cheese, 1/4 cup sugar, vanilla extract, and a pinch of salt until smooth
- Slice peaches and toss them with 2 tablespoons sugar, cornstarch, and lemon juice
- Spread the cream cheese mixture on the puff pastry and arrange peach slices on top
- Brush the pastry border with beaten egg and bake for 25-30 minutes until golden brow
