Description

This Parmesan Chicken Meatloaf is a lighter, flavorful version of the classic dish, made with ground chicken, fresh herbs, and Parmesan cheese. It is easy to prepare and perfect for weeknight dinners.

1 ½ pounds Ground Chicke
½ cup Panko Breadcrumbs
½ cup Finely Grated Parmesan Cheese
1 large Egg
½ cup Finely Chopped Yellow Onio
2 cloves Garlic, minced
2 tablespoons Fresh Parsley, chopped
1 teaspoon Dried Oregano
½ teaspoon Salt
¼ teaspoon Black Pepper
2 tablespoons Olive Oil
½ cup Ketchup (for glaze)
2 tablespoons Brown Sugar (for glaze)
1 tablespoon Apple Cider Vinegar (for glaze)
1 teaspoon Dijon Mustard (for glaze)


Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish
  2. Sauté onion in olive oil until translucent, then add garlic and cool
  3. In a bowl, combine ground chicken, panko, ½ cup Parmesan, egg, onion, garlic, parsley, oregano, salt, and pepper. Mix gently
  4. Shape mixture into a loaf and place in prepared dish
  5. For glaze, mix ketchup, brown sugar, apple cider vinegar, and Dijon mustard
  6. Spread half the glaze on meatloaf and bake for 45 minutes
  7. Add remaining glaze, sprinkle with extra Parmesan if desired, and bake for an additional 15-20 minutes until cooked through
  8. Let rest for 10-15 minutes before slicing and serving

Mix gently to avoid a tough meatloaf.
