This Parmesan Chicken Meatloaf is a lighter, flavorful version of the classic dish, made with ground chicken, fresh herbs, and Parmesan cheese. It is easy to prepare and perfect for weeknight dinners.
Ingredients
1 ½ pounds Ground Chicke
½ cup Panko Breadcrumbs
½ cup Finely Grated Parmesan Cheese
1 large Egg
½ cup Finely Chopped Yellow Onio
2 cloves Garlic, minced
2 tablespoons Fresh Parsley, chopped
1 teaspoon Dried Oregano
½ teaspoon Salt
¼ teaspoon Black Pepper
2 tablespoons Olive Oil
½ cup Ketchup (for glaze)
2 tablespoons Brown Sugar (for glaze)
1 tablespoon Apple Cider Vinegar (for glaze)
1 teaspoon Dijon Mustard (for glaze)
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking dish
- Sauté onion in olive oil until translucent, then add garlic and cool
- In a bowl, combine ground chicken, panko, ½ cup Parmesan, egg, onion, garlic, parsley, oregano, salt, and pepper. Mix gently
- Shape mixture into a loaf and place in prepared dish
- For glaze, mix ketchup, brown sugar, apple cider vinegar, and Dijon mustard
- Spread half the glaze on meatloaf and bake for 45 minutes
- Add remaining glaze, sprinkle with extra Parmesan if desired, and bake for an additional 15-20 minutes until cooked through
- Let rest for 10-15 minutes before slicing and serving
