A delightful Oven Roasted French Garlic Chicken seasoned with garlic, herbs, and lemon, offering comfort and flavor in every bite.
Ingredients
1 whole chicken, approximately 3.5-4 pounds
1 whole head of garlic, separated into cloves and peeled
2 tablespoons fresh rosemary, roughly chopped
2 tablespoons fresh thyme leaves
1 large lemon, halved
3 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
½ cup chicken broth (optional)
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels
- In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper to form a paste
- Loosen the skin of the chicken and spread half of the paste under the skin. Rub the rest on the outside
- Stuff the lemon halves into the chicken cavity and pour broth into the roasting pa
- Roast for 20 minutes at 400°F, then reduce to 375°F (190°C) and continue roasting for another 60-80 minutes
- Remove from oven and let rest for 10-15 minutes before carving
- Carve and serve, drizzling pan juices over the chicke

Pat dry for crispy skin. Use a meat thermometer for accurate cooking.
