Description

A delightful Oven Roasted French Garlic Chicken seasoned with garlic, herbs, and lemon, offering comfort and flavor in every bite.


Ingredients

1 whole chicken, approximately 3.5-4 pounds
1 whole head of garlic, separated into cloves and peeled
2 tablespoons fresh rosemary, roughly chopped
2 tablespoons fresh thyme leaves
1 large lemon, halved
3 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
½ cup chicken broth (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels
  2. In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper to form a paste
  3. Loosen the skin of the chicken and spread half of the paste under the skin. Rub the rest on the outside
  4. Stuff the lemon halves into the chicken cavity and pour broth into the roasting pa
  5. Roast for 20 minutes at 400°F, then reduce to 375°F (190°C) and continue roasting for another 60-80 minutes
  6. Remove from oven and let rest for 10-15 minutes before carving
  7. Carve and serve, drizzling pan juices over the chicke

Notes

Pat dry for crispy skin. Use a meat thermometer for accurate cooking.
