Ingredients
Instructions
- Combine all-purpose flour and salt in a large mixing bowl. Add very cold cubed butter to the mixture and cut it into the flour until it resembles coarse crumbs
- Gradually add ice water, mixing lightly until the dough comes together. Form into a ball, flatten into a disc, wrap in plastic wrap, and refrigerate for 30 minutes
- Roll out the chilled dough into a 12-inch circle. Transfer to a 9-inch pie plate, trim edges, fold overhang under, and crimp edges. Pre-bake at 375°F for 15 minutes, then another 5-7 minutes until golde
- In a medium saucepan, whisk together granulated sugar, unsweetened cocoa powder, all-purpose flour, and salt. In a separate bowl, whisk eggs and combine with whole milk. Combine wet and dry mixtures and cook over medium heat, whisking constantly until thickened and boiling
- Remove from heat, stir in melted butter and vanilla extract until smooth. Pour filling into the cooled pie crust and chill for at least 4 hours or overnight
- For the optional topping, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Serve by dolloping or piping whipped cream over pie topped with chocolate shavings
Notes
Ensure butter is very cold for flaky crust.
Blind-bake crust to prevent a soggy bottom.
Chill the pie for at least 4 hours to set correctly.
