Description

No-bake salted caramel cookies are chewy, salty-sweet treats made with oats, caramel bits, and flaky sea salt. A quick, no-oven dessert!

Ingredients

Scale
  • 2 cups quick oats
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ½ cup milk
  • 1 box (3.4 oz) instant butterscotch pudding mix
  • ½ cup toffee chips
  • ½ cup caramel bits
  • 1 teaspoon vanilla extract
  • ½ teaspoon flaky sea salt (plus extra for topping)
  • ½ cup semi-sweet chocolate (optional)

Instructions

1. Melt butter, sugar, and milk in a saucepan over medium heat until smooth.

2. Bring mixture to a gentle boil for 1–2 minutes.

3. Remove from heat and whisk in butterscotch pudding mix.

4. Stir in oats, toffee chips, caramel bits, and vanilla until combined.

5. Scoop tablespoons onto parchment-lined baking sheet.

6. Sprinkle with flaky sea salt.

7. Optional: drizzle or dip in melted chocolate.

8. Chill for 30 minutes before serving.

Notes

Use quick oats, not rolled oats, for best texture.

Work quickly—mixture sets fast.

Freeze cookies for up to 3 months.
