Ingredients
1 sheet Puff Pastry, thawed
2 tablespoons Olive Oil
1 cup Mushrooms, thinly sliced
2 Shallots, thinly sliced
3 ounces Herbed Goat Cheese, crumbled
1 tablespoon Fresh Thyme Leaves
1 Egg, beaten (for egg wash)
Salt and Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper
- In a skillet over medium heat, add olive oil. Sauté mushrooms and shallots until soft and golden, about 5-7 minutes
- Season with salt, pepper, and thyme. Stir and set aside to cool slightly
- Roll out the puff pastry on a floured surface. Cut into four equal squares and place them on the prepared baking sheet
- Evenly distribute the mushroom mixture onto each square, leaving a small border around the edges
- Top with crumbled herbed goat cheese
- Brush the pastry edges with the beaten egg
- Bake for 15-20 minutes, or until the pastry is puffed and golden brow
- Remove from the oven and let the tarts cool on a wire rack before serving
