Description

These Low-Carb Pizza Rolls are a delicious, guilt-free snack that satisfies pizza cravings with a cheesy, flavorful filling wrapped in a golden, low-carb crust.

2 cups Shredded Mozzarella Cheese
4 ounces Cream Cheese, softened
3/4 cup Almond Flour
1 large Egg
1 teaspoon Garlic Powder
1 teaspoon Dried Italian Seasoning
1/4 teaspoon Salt
1/4 cup Sugar-Free Pizza Sauce
1/2 cup Sliced Chicken Pepperoni
2 tablespoons Grated Parmesan Cheese
Optional: Fresh Parsley, chopped, for garnish
Optional: Dipping Sauce (sugar-free marinara, ranch)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper
  2. In a microwave-safe bowl, combine 1 ½ cups of mozzarella cheese and all cream cheese. Microwave on high for 60-90 seconds, stirring halfway, until melted and smooth
  3. Add almond flour, egg, garlic powder, Italian seasoning, and salt to the melted cheese mixture, mixing until a cohesive dough forms
  4. Roll the dough between two sheets of parchment paper into a rectangle, approximately 12×9 inches
  5. Spread pizza sauce over the dough, leaving a 1/2-inch border. Sprinkle with remaining mozzarella cheese, chicken pepperoni, and grated Parmesa
  6. Roll the dough tightly from one of the longer sides into a log, then slice into 12-16 equal pieces
  7. Place the slices cut-side up on the prepared baking sheet and bake for 15-20 minutes or until golden brown and bubbly
  8. Let cool slightly before serving, garnished with fresh parsley if desired, and with your favorite dipping sauce
