Ingredients
1 (32-ounce) bag frozen tater tots
1 tablespoon olive oil
8 ounces beef breakfast sausage
6 slices beef baco
1/2 cup chopped yellow onio
1/2 cup chopped bell pepper
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Fresh chives or green onions, chopped
Instructions
- Preheat oven to 400°F (200°C). Bake tater tots according to package directions until crispy
- In a skillet, heat olive oil. Cook crumbled sausage until browned. Remove and set aside
- In the same skillet, cook bacon until crispy. Remove and crumble
- Sauté onion and bell pepper in the skillet until soft
- Whisk together eggs, milk, salt, and pepper. Scramble in the skillet until fluffy
- Assemble bowls with tater tots, sausage, bacon, eggs, and cheeses
- Melt cheese in the microwave or oven, then garnish with chives
