Description

1/2 cup Milk
1/2 cup Unsalted Butter
1 cup All-Purpose Flour
4 large Eggs
1/4 teaspoon Salt
1/2 cup Fresh Raspberries, plus extra for garnish
1/2 cup Lemon Curd
1 cup Heavy Cream
1/4 cup Powdered Sugar
1 teaspoon Vanilla Extract


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper
  2. In a saucepan, heat the water, milk, butter, and salt over medium heat until boiling. Remove from heat and stir in the flour until it forms a ball
  3. Allow the mixture to cool slightly, then beat in the eggs one at a time until smooth
  4. Pipe the dough onto the prepared baking sheet in 4-inch strips
  5. Bake for 20 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 15 minutes until golde
  6. Let the pastries cool completely before filling
  7. Whip the cream, powdered sugar, and vanilla until soft peaks form. Gently fold in the lemon curd and raspberries
  8. Slice the éclairs open along one side and fill them with the lemon raspberry cream using a piping bag
  9. Garnish with extra raspberries and serve with a dusting of powdered sugar or a glaze if desired
