Ingredients
1 tablespoon Olive oil
1 pound Large shrimp, peeled and deveined
½ teaspoon Dried oregano
¼ teaspoon Black pepper
2 cloves Garlic, minced
4 cups Vegetable broth
1 cup Orzo pasta
½ cup Crumbled feta cheese
¼ cup Fresh lemon juice (from 1–2 lemons)
2 tablespoons Fresh parsley, chopped
Lemon wedges, for serving (optional)
Instructions
- Pat the shrimp dry and season with oregano and pepper
- Heat oil in a skillet over medium-high heat, cook shrimp until pink, then remove from skillet
- Reduce heat, sauté garlic until fragrant
- Pour in broth, bring to a simmer, add orzo, and cook until al dente
- Return shrimp to skillet, add feta and lemon juice, mix gently
- Stir in parsley, adjust seasoning, and serve immediately
