Description

A creamy, cheesy, and flavorful low-carb BBQ chicken casserole that satisfies comfort food cravings while keeping to ketogenic dietary goals.


Ingredients

2 cups cooked chicken breast, shredded or cubed
1 cup sugar-free BBQ sauce
1 cup heavy cream
1/2 cup chicken broth
1/2 cup cream cheese, softened
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
2 cups shredded mozzarella cheese, divided
1/2 cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
  2. In a large bowl, whisk together the sugar-free BBQ sauce, heavy cream, chicken broth, softened cream cheese, onion powder, garlic powder, and smoked paprika until smooth. Season with salt and pepper to taste
  3. Add the shredded cooked chicken to the sauce mixture and stir well to coat
  4. Pour the chicken mixture into the prepared baking dish and spread evenly
  5. Sprinkle 1.5 cups of mozzarella cheese and all of the cheddar cheese on top of the chicken mixture
  6. Bake in the preheated oven for 20-25 minutes, or until bubbly around the edges and the cheese is melted and lightly golde
  7. Optionally, add the remaining 1/2 cup of mozzarella cheese during the last 5 minutes of baking
  8. Let the casserole rest for 5-10 minutes before serving, garnish with fresh parsley if desired

Notes

For best results, use high-quality sugar-free BBQ sauce and ensure your cream cheese is softened.
