A creamy, cheesy, and flavorful low-carb BBQ chicken casserole that satisfies comfort food cravings while keeping to ketogenic dietary goals.
Ingredients
2 cups cooked chicken breast, shredded or cubed
1 cup sugar-free BBQ sauce
1 cup heavy cream
1/2 cup chicken broth
1/2 cup cream cheese, softened
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
2 cups shredded mozzarella cheese, divided
1/2 cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
- In a large bowl, whisk together the sugar-free BBQ sauce, heavy cream, chicken broth, softened cream cheese, onion powder, garlic powder, and smoked paprika until smooth. Season with salt and pepper to taste
- Add the shredded cooked chicken to the sauce mixture and stir well to coat
- Pour the chicken mixture into the prepared baking dish and spread evenly
- Sprinkle 1.5 cups of mozzarella cheese and all of the cheddar cheese on top of the chicken mixture
- Bake in the preheated oven for 20-25 minutes, or until bubbly around the edges and the cheese is melted and lightly golde
- Optionally, add the remaining 1/2 cup of mozzarella cheese during the last 5 minutes of baking
- Let the casserole rest for 5-10 minutes before serving, garnish with fresh parsley if desired
