Ingredients
1 medium green cabbage (about 2 pounds)
2 tablespoons olive oil
1 small yellow onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 Scotch bonnet pepper, deseeded and finely minced (optional)
2 sprigs fresh thyme
1 teaspoon smoked paprika
½ teaspoon black pepper
¼ teaspoon salt
½ cup vegetable broth
1 tablespoon fresh lime juice
Instructions
- Prepare the Cabbage: Remove bruised leaves, cut in half, remove tough core, and thinly slice cabbage
- Sauté the Aromatics: Heat olive oil, add onion and bell pepper, cook until soft
- Add Garlic and Pepper: Stir in garlic and Scotch bonnet, cook until fragrant
- Introduce Spices and Thyme: Add smoked paprika, black pepper, salt, and thyme, cook briefly
- Add Cabbage and Broth: Stir in cabbage and broth, mix well
- Steam the Cabbage: Cover and steam on low heat for 10-15 minutes to desired tenderness
- Finish with Lime Juice: Remove from heat, add lime juice, adjust seasoning
- Serve Immediately: Transfer to a serving dish and enjoy warm
