Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/2 cups milk
- 2 large eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 cup cooked crispy bacon (chopped)
- 1/4 cup pure maple syrup
Instructions
1. Preheat oven to 375°F (190°C) and grease or line muffin tin.
2. Whisk flour, sugar, baking powder, and salt in large bowl.
3. Whisk milk, eggs, melted butter, and vanilla in another bowl.
4. Combine wet and dry ingredients until just mixed.
5. Fold in bacon and maple syrup.
6. Spoon batter into muffin cups and top with extra bacon and syrup if desired.
7. Bake 18-22 minutes until toothpick inserted is clean.
8. Cool 5 minutes before removing from pan.
