1/4 cup Unsalted Butter, softened
1/2 teaspoon Salt, or to taste
1/4 teaspoon Black Pepper, or to taste
Optional: 1-2 tablespoons Fresh Chives, chopped, for garnish


Instructions

  1. Step 1: Peel and cut potatoes into uniform 1-inch chunks. Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, warm cream, salt, and pepper
  2. Step 2: Pat chicken dry, season with salt, pepper, and onion powder. In a skillet, heat olive oil and sear chicken until golden brown, about 5-7 minutes per side. Remove and tent with foil
  3. Step 3: Sauté garlic and herbs in the same skillet until fragrant. Deglaze with chicken broth, simmer, then stir in heavy cream and butter until sauce thickens
  4. Step 4: Return chicken to the skillet, spoon sauce over it. Serve with creamy mashed potatoes and garnish with fresh chives
