Description

Instant Pot Spicy Black Beans are a quick and easy dish that combines the rich flavors of spices and vegetables with tender black beans, making it a comforting meal perfect for weeknights.


Ingredients

2 tablespoons Olive Oil
1 large Yellow Onion, chopped
4 cloves Garlic, minced
1 Jalapeño, seeded and minced
1 Red Bell Pepper, diced
1 teaspoon Ground Cumi
1 teaspoon Chili Powder
½ teaspoon Smoked Paprika
¼ teaspoon Cayenne Pepper (optional)
1 pound Dried Black Beans, rinsed and picked over
4 cups Vegetable Broth (or Water)
1 (14.5-ounce) can Diced Tomatoes, undrained
1 teaspoon Salt, or to taste
½ teaspoon Black Pepper, freshly ground
Juice of 1 Lime
Fresh Cilantro, chopped, for garnish


Instructions

  1. Sauté Aromatics: Select the 'Sauté' function on your Instant Pot. Add the olive oil and let it heat for a minute. Add the chopped yellow onion, diced red bell pepper, and minced jalapeño. Cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute
  2. Add Spices: Turn off 'Sauté' function. Stir in ground cumin, chili powder, smoked paprika, and optional cayenne pepper. Cook for 30 seconds to toast the spices
  3. Combine Ingredients: Add rinsed black beans. Pour in vegetable broth and the can of diced tomatoes. Stir to ensure beans are submerged
  4. Pressure Cook: Secure the lid and set vent to 'Sealing'. Select 'Manual' or 'Pressure Cook' and set the time for 30 minutes on high pressure
  5. Natural Release: Once finished, allow for 15 minutes of natural pressure release. Carefully move the vent to 'Venting' position to release any remaining pressure
  6. Season and Serve: Open lid, stir well. Adjust seasoning with salt and pepper as needed. Stir in lime juice and garnish with cilantro before serving

Notes

For less heat, omit the jalapeño or remove seeds.

For added flavor, use high-quality vegetable broth instead of water.

Beans can be made ahead of time and flavors will improve overnight.
