A quick and delicious sheet pan meal combining sweet potatoes, broccoli, and sausage in a honey garlic sauce, perfect for busy weeknights.
Ingredients
1.5 lbs Chicken Sausage, pre-cooked, sliced into 1-inch thick rounds
2 large Sweet Potatoes, peeled and cut into 1-inch cubes
1 head Broccoli, cut into florets
3 tablespoons Olive Oil, divided
4 cloves Garlic, minced
1/4 cup Honey
2 tablespoons Soy Sauce
1 tablespoon Apple Cider Vinegar
1/2 teaspoon Red Pepper Flakes, optional
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
2 tablespoons Fresh Parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper
- In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on one half of the prepared baking sheet
- Place the sweet potatoes in the preheated oven and roast for 15 minutes
- While the sweet potatoes roast, combine the sliced sausage and broccoli florets in the same large bowl. Drizzle with the remaining 1 tablespoon of olive oil and toss to coat
- In a small bowl, whisk together the minced garlic, honey, soy sauce, apple cider vinegar, and red pepper flakes to make the honey garlic sauce
- After 15 minutes, remove the baking sheet from the oven. Add the sausage and broccoli to the other half of the baking sheet. Pour half of the prepared honey garlic sauce evenly over the entire pa
- Return the baking sheet to the oven and roast for another 15-20 minutes, until the sweet potatoes are tender, and the sausage is browned
- Remove from oven and drizzle the remaining honey garlic sauce over everything. Toss gently to coat. Garnish with chopped parsley and serve
Notes
Ensure to cut all vegetables to similar sizes for even cooking.
For added heat, increase the red pepper flakes or add hot sauce.
