Description

Honey Feta Sweet Potato Rounds are an easy, elegant side: caramelized sweet potato slices topped with creamy feta, warm honey, and fresh herbs. Perfect for Thanksgiving, holiday buffets, or a simple weeknight veggie side.


Ingredients

  • 2 large sweet potatoes (garnet or jewel), scrubbed
  • 2 tbsp olive oil
  • 3/4 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1/3 cup crumbled feta cheese
  • 2 tbsp honey (warm slightly if thick)
  • 12 tsp fresh thyme or chopped rosemary, for garnish
  • Optional: 2 tbsp chopped pistachios or walnuts; 2 tbsp pomegranate arils; 1–2 tsp balsamic glaze

Instructions

1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment.

2. Slice sweet potatoes into 1/2-inch rounds (even thickness). Arrange in a single layer.

3. Brush both sides with olive oil; season with 1/2 tsp salt and black pepper.

4. Roast 20–25 minutes, flipping halfway, until edges are caramelized and centers are tender.

5. Remove pan from oven; immediately sprinkle each round with crumbled feta.

6. Drizzle honey evenly over the hot rounds. Sprinkle remaining 1/4 tsp salt to balance sweetness.

7. Garnish with thyme or rosemary. Add nuts, pomegranate, or balsamic glaze if desired. Serve warm.

Notes

Tips:

• Even slices = even roasting. Aim for 1/2-inch thick.

• For extra browning, broil 1–2 minutes at the end (watch closely).

• Not peeling is fine—the skins crisp nicely and add fiber.

• Swap-ins: goat cheese for extra creaminess; maple syrup for a deeper sweetness.

 

Make-ahead & storage:

• Roast rounds up to 1 day ahead. Reheat at 375°F (190°C) for ~10 minutes, then add feta, honey, and garnishes.

• Refrigerate leftovers up to 3 days. Reheat in oven or air fryer to re-crisp.
