1 block (8 ounces / 225g) Good Quality Feta Cheese, drained
1/2 cup (120ml) Extra Virgin Olive Oil, plus more for drizzling
1/4 cup Fresh Parsley, finely chopped
1/4 cup Fresh Dill, finely chopped
2 tablespoons Fresh Mint, finely chopped
1 clove Garlic, minced very fine or grated
1 tablespoon Fresh Lemon Juice, plus more to taste
1/2 teaspoon Black Pepper, freshly ground
Pinch of Red Pepper Flakes (optional)


Instructions

  1. Crumble the drained feta into a medium-sized bowl
  2. Add the finely chopped parsley, dill, and mint to the crumbled feta and mix gently
  3. Introduce minced garlic, lemon juice, black pepper, and optional red pepper flakes to the bowl
  4. Slowly pour in the olive oil
  5. Use a fork or spatula to gently mash and combine all the ingredients without fully smoothing it out
  6. Taste and adjust the seasonings as needed
  7. Transfer to a serving bowl and drizzle with more olive oil before serving

Notes

Allow the dip to chill in the refrigerator for at least 30 minutes for the flavors to meld.
