1 cup Unsalted butter, softened

¾ cup Packed light brown sugar
1 large Egg

10 ounces Maraschino cherries, well-drained and roughly chopped
1 ½ cups Semi-sweet chocolate chips


Instructions

  1. Prepare your cherries by draining them well and roughly chopping
  2. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper
  3. In a medium bowl, whisk together the flour, baking soda, and salt
  4. In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy
  5. Add the egg and vanilla extract and mix until fully incorporated
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined
  7. Fold in the chopped maraschino cherries and chocolate chips
  8. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart
  9. Bake for 9-11 minutes until edges are golden brown and centers are soft
