Ingredients
2 ¼ cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup Unsalted butter, softened
¾ cup Granulated sugar
¾ cup Packed light brown sugar
1 large Egg
1 teaspoon Alcohol-free vanilla extract
10 ounces Maraschino cherries, well-drained and roughly chopped
1 ½ cups Semi-sweet chocolate chips
Instructions
- Prepare your cherries by draining them well and roughly chopping
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper
- In a medium bowl, whisk together the flour, baking soda, and salt
- In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy
- Add the egg and vanilla extract and mix until fully incorporated
- Gradually add the dry ingredients to the wet ingredients and mix until just combined
- Fold in the chopped maraschino cherries and chocolate chips
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart
- Bake for 9-11 minutes until edges are golden brown and centers are soft
- Cool on the baking sheets for 2-3 minutes before transferring to a wire rack
Notes
Make sure to drain and pat the cherries dry to avoid excess moisture in the dough.
For chewier cookies, consider chilling the dough before baking.
