Ingredients
1/2 cup Unsalted Butter, melted
1 cup Granulated Sugar
2 Large Eggs
1 teaspoon Vanilla Extract
1/2 cup All-Purpose Flour
1/3 cup Unsweetened Cocoa Powder
1/4 teaspoon Salt
8 ounces Cream Cheese, softened
1/4 cup Granulated Sugar
1 Large Egg Yolk
1/2 teaspoon Vanilla Extract
1/2 cup Fresh or Frozen Raspberries
1 tablespoon Granulated Sugar
1 teaspoon Lemon Juice (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper
- In a saucepan, cook raspberries, 1 tablespoon sugar, and lemon juice over medium-low heat until thickened, then let cool
- In a bowl, whisk melted butter and sugar, then add eggs and vanilla. In another bowl, mix flour, cocoa powder, and salt. Combine wet and dry ingredients
- In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth
- Layer brownie batter in pan, dollop cheesecake batter, and swirl with raspberry mixture
- Bake for 30-35 minutes until edges are set. Let cool, then cut into hearts
