Ingredients
2 cups Cottage cheese, full-fat or low-fat
1 large Cucumber, deseeded and diced
2 ripe Roma tomatoes, diced
1/2 Red onion, very thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/4 cup Fresh parsley, chopped
2 tablespoons Fresh dill, chopped
2 tablespoons Olive oil
2 tablespoons Fresh lemon juice
1/2 teaspoon Dried oregano
1/4 teaspoon Sea salt, or to taste
1/8 teaspoon Black pepper, freshly ground, or to taste
Instructions
- Prepare the vegetables: Wash all vegetables thoroughly. Dice cucumber and Roma tomatoes. Thinly slice the red onion. Halve Kalamata olives. Chop parsley and dill
- Make the dressing: In a small bowl, combine olive oil, lemon juice, oregano, sea salt, and black pepper. Whisk until emulsified
- Combine ingredients: Add cottage cheese to the bowl with vegetables and herbs, pour over the dressing
- Gently mix: Fold the ingredients together carefully to avoid crushing the cottage cheese
- Taste and adjust: Taste the salad and adjust seasonings as needed
