Description
This Greek Chicken Flatbread is a delightful and quick meal featuring seasoned chicken, creamy tzatziki, and fresh vegetables on a soft flatbread, perfect for busy weeknights.
Ingredients
500 g Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 tablespoons Olive oil
1 tablespoon Dried oregano
1 teaspoon Dried dill
1/2 teaspoon Garlic powder
1/4 teaspoon Salt
1/8 teaspoon Black pepper
1 tablespoon Lemon juice
1 cup Plain Greek yogurt
1/2 Cucumber, grated and squeezed of excess water
1 clove Garlic, minced
1 tablespoon Fresh dill, chopped
1 tablespoon Lemon juice
1/4 teaspoon Salt
1/8 teaspoon Black pepper
4 pieces Naan bread or large pita flatbreads
1 cup Cherry tomatoes, halved
1/2 English cucumber, diced
1/4 Red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup Crumbled feta cheese
Fresh parsley or dill, chopped, for garnish (optional)
Extra virgin olive oil for drizzling (optional)
Instructions
- Prepare the Chicken: Cut chicken into 1-inch pieces and marinate with olive oil, oregano, dill, garlic powder, salt, pepper, and lemon juice for at least 15 minutes
- Cook the Chicken: Heat skillet, cook marinated chicken until golden brown and internal temperature reaches 74°C (165°F)
- Make the Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper
- Prepare the Toppings: Wash and cut vegetables, prepare feta cheese
- Warm the Flatbreads: Preheat oven and warm naan or pita with a couple minutes in the ove
- Assemble the Flatbreads: Spread tzatziki on each flatbread, top with chicken, vegetables, and feta
- Garnish and Serve: Add herbs, drizzle with olive oil, and serve immediately
Notes
Marinate chicken for at least 30 minutes for enhanced flavor.
Squeeze cucumber to avoid watery tzatziki.
