This Gouda & Mushroom Stuffed Chicken features succulent chicken breasts filled with a creamy, flavorful mixture of Gouda cheese and earthy mushrooms, all baked to perfection.
Ingredients
4 each Boneless Skinless Chicken Breasts (about 6–8 ounces each)
8 ounces Cremini Mushrooms, finely chopped
2 tablespoons Olive Oil, divided
1 small Yellow Onion, finely minced
2 cloves Garlic, minced
1 cup Shredded Gouda Cheese
2 tablespoons Fresh Parsley, chopped
1 tablespoon Fresh Thyme, chopped
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 cup Chicken Broth
2 tablespoons Unsalted Butter
1 tablespoon All-Purpose Flour
1 cup Milk (whole or 2%)
Pinch of Nutmeg (optional, for sauce)
Instructions
- Step 1: Prepare the chicken by butterflying each breast and pounding to 1/2-inch thickness, seasoning with salt and pepper
- Step 2: Make the filling by sautéing mushrooms, onions, and garlic, then mix with Gouda, herbs, salt, and pepper
- Step 3: Stuff the chicken breasts with the filling and seal them
- Step 4: Sear the stuffed chicken in a skillet until golden brow
- Step 5: Bake in a preheated oven until fully cooked
- Step 6: Prepare a pan sauce with drippings, butter, flour, and milk
- Step 7: Let the chicken rest before serving with the pan sauce
