Description

Ingredients

3 cups cooked, day-old white rice
2 tablespoons vegetable oil
1 cup cooked chicken breast, diced
1/2 cup frozen peas and carrots blend
1/2 small onion, finely diced
2 cloves garlic, minced
1 large egg, lightly beate
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
1/2 teaspoon white pepper
2 green onions, thinly sliced


Instructions

  1. Break up any large clumps of cold rice with your hands
  2. Heat a large wok or skillet over high heat and add the vegetable oil
  3. Stir-fry the diced onion for 1-2 minutes until soft, then add the garlic for an additional 30 seconds
  4. Add the frozen peas and carrots and stir-fry for 2-3 minutes, then add the diced chicken and heat through
  5. Push everything to one side of the wok, pour in the egg, and scramble until just set
  6. Incorporate the cold rice, soy sauce, oyster sauce, and white pepper, mixing thoroughly
  7. Continue to stir-fry the mixture over high heat for 3-5 minutes, pressing the rice against the surface
  8. Drizzle with sesame oil, toss to combine, and serve garnished with green onions
