Ingredients
500 g Dry Pasta
4 large Yellow Onions
100 g Unsalted Butter
2 tablespoons Olive Oil
4 cloves Garlic
1 teaspoon Dried Thyme
1/2 teaspoon Black Pepper
1/4 teaspoon Salt
700 ml Vegetable Broth
120 ml Heavy Cream
60 g Grated Gruyère Cheese
2 tablespoons Fresh Parsley
Instructions
- Thinly slice the yellow onions
- Heat olive oil in a large pan, add onions, salt, and pepper, and caramelize for 45-60 minutes
- While onions are caramelizing, cook pasta according to package directions
- Melt butter in a saucepan, browning it until it is amber-colored and fragrant
- Add garlic and thyme to the caramelized onions and cook for 1-2 minutes
- Deglaze with vegetable broth and simmer for 5-7 minutes
- Combine drained pasta with the onion mixture, adding heavy cream and reserved pasta water
- Stir in Gruyère cheese and browned butter, adjusting consistency with pasta water
- Serve topped with chopped parsley and extra cheese
