1/2 cup (120 ml) low-sodium soy sauce
1/2 cup (100 g) packed light brown sugar
1/4 cup (60 ml) water
2 tablespoons (30 ml) rice vinegar
1 tablespoon (15 ml) sesame oil
2 cloves garlic, minced
1 tablespoon (15 g) fresh ginger, grated
1 tablespoon (8 g) cornstarch
2 tablespoons (30 ml) cold water (for cornstarch slurry)


Instructions

  1. Combine Wet Ingredients: In a medium saucepan, combine the low-sodium soy sauce, light brown sugar, 1/4 cup water, rice vinegar, and sesame oil. Whisk together until the brown sugar dissolves
  2. Add Aromatics: Stir in the minced garlic and grated fresh ginger, mixing thoroughly
  3. Heat the Mixture: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally
  4. Prepare Cornstarch Slurry: In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water until smooth
  5. Thicken the Sauce: Slowly pour the cornstarch slurry into the saucepan while continuously whisking. Continue whisking for 1-2 minutes until thickened
  6. Simmer and Serve: Simmer for another minute or two. Remove from heat and serve immediately or cool before storing

Notes

For a gluten-free version, use tamari instead of soy sauce.

Add 1/2 to 1 teaspoon of sriracha for a spicy kick.
