1 pound large shrimp, peeled, deveined, tails on or off
12 ounces linguine or spaghetti
3 tablespoons extra virgin olive oil
6 cloves garlic, minced
1/2 cup non-alcoholic white cooking grape juice or chicken broth with 1 tsp white vinegar
1/2 cup low sodium chicken broth
1/2 teaspoon red pepper flakes
1/4 cup fresh lemon juice
1/4 cup fresh parsley, chopped, plus more for garnish
4 tablespoons unsalted butter, cold and cut into cubes
Salt and freshly ground black pepper to taste


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining
  2. Prepare the Shrimp: Pat the shrimp dry and season with salt and pepper
  3. Sauté the Garlic: Heat olive oil in a large skillet over medium heat, add garlic and red pepper flakes, and sauté for 30-60 seconds until fragrant
  4. Add Liquids: Pour in the grape juice and chicken broth, bring to a simmer for 2-3 minutes
  5. Cook the Shrimp: Add the shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque
  6. Finish the Sauce: Remove from heat, stir in lemon juice and parsley, then gradually whisk in cold butter until melted
  7. Combine Pasta and Sauce: Add the drained linguine to the skillet, toss to coat, adding reserved pasta water as needed
  8. Serve Immediately: Taste and adjust seasoning before serving with parsley and a wedge of lemo

For a gluten-free option, use gluten-free pasta.
