Ingredients
1 tablespoon Olive Oil
1 small Yellow Onion, chopped
2 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
6 cups Chicken Broth or Vegetable Broth
1/2 cup Soy Sauce (low sodium preferred)
1 tablespoon Rice Vinegar
1 teaspoon Sesame Oil, for finishing
1 pound Frozen Chicken or Beef Potstickers/Dumplings
2 cups Fresh Spinach, roughly chopped
1 cup Sliced Mushrooms (cremini or shiitake)
1 cup Shredded Carrots
2 Green Onions, sliced, for garnish
1 teaspoon Red Pepper Flakes (optional)
Instructions
- Heat the Olive Oil in a large pot over medium heat. Add the Onion and sauté until softened, about 3-4 minutes. Stir in the Garlic and Ginger, cooking for an additional minute
- Pour in the Chicken Broth, Soy Sauce, and Rice Vinegar. Bring to a gentle boil, then reduce heat and let simmer for 5-7 minutes
- Add Mushrooms and Carrots to the broth, cooking for 3-5 minutes until slightly softened
- Carefully add the Frozen Potstickers to the soup and cook according to package instructions until they are heated through
- Stir in the Fresh Spinach until wilted, about 1-2 minutes
- Remove from heat and stir in the Sesame Oil and Red Pepper Flakes. Serve immediately, garnished with sliced Green Onions
